For a Sunday picnic at Poço Negro


Cheese and Salami Muffins

225gr. self-raising flour / 1 tbsp baking powder / 1 tbsp paprika / pinch of salt / 150gr. finely snipped salami / 75gr. mature cheddar, chopped / 50gr. unsalted butter, melted and cooled slightly / 1 egg lightly beaten / 1tbsp wholegrain mustard / 50 ml milk

Preheat the oven to 200ºC. Grease a 12-hole muffin tin.

Sift the flour, baking powder, paprika and salt into a large bowl. Stir in the salami and chopped cheese. Make a well in the centre. 

Mix together the egg, mustard and milk and slowly add this to the dry ingredients along with the melted butter. Mix together briefly until just combined. 

Divide the mixture between the muffins tins and bake for 8 - 10 minutes until golden brown and just firm to the touch.
